I am pulling in data from a Google shett and one of my headers are dynamic, is there any way of makin the header change without going in and manually push the update button?
I am sorry to disappoint you, but unfortunately, something like this is not possible with the plugin's built-in features.
Moreover, it's not recommended to change the headers of tables linked to an existing data source (Google spreadsheet, Excel, CSV, etc) because wpDataTables stores the header in the database and changing the header may cause the table to break.
Our developers have been working on this and it seems only updating the headers is working fine, but we still haven't gone through all necessary testing so we can't say that it's fixed 100%.

You can certainly follow our changeLog page if you'd like ( it is also available in the plugin dashboard), where we state any changes/new features/bug fixes during updates;
and our newsletter, so you're informed about new features, bug fixes, freebies, etc.
