This is exactly how the WooCommerce integration with the Amelia plugin works. When the customer books an appointment, he will be redirected to the cart/checkout page, but when the appointment in Amelia is transferred to the cart, it will erase all the other items from the cart.

Unfortunately, at the moment, there is no Demo that is using the WooCommerce payment method. There is an option to enable the Customer panel in Amelia. The front-end Customer Panel allows you to offer your customers an easy way to track, reschedule and/or cancel their appointments and events. In the Customer Panel, customers can manage their personal details without logging into the WordPress backend. You can read more about the customer panel at the following link.
