Is there any setting/feature in Amelia to offer to the user the option of purchase the service and save it in his user profile without making the reservation/booking straight forward in this moment?
So later on (even after some days) when the customer have time, he can make the booking/reservation.
Unfortunately, currently, this feature is not built-in in Amelia. All appointment needs to be booked at a certain time and date and paid for at the end of the booking process.
I'll kindly ask you to add it as a feature suggestion on this page.
Features are pushed up on our "to-do" list when there are a lot of customers requesting those features, so having your vote as a customer can be beneficial to this feature being developed sooner.

Is this why I am having a problem where my clients are buying a 15 pack of training sessions and then they are forced to book all 15 for the month at that moment? This can't really be a limitation of your platform is it? I've spent countless hours setting this up and this could be a deal-breaker I imagine for many people.
There are 2 options to configure how many appointments the customer must book upon buying the purchase.
“Minimum bookings required” is the option where you set the required number of appointments for the chosen service that the customer needs to book in order to be able to book the package. You can set 0 if you don’t want to restrict customers and as a maximum number here you can set the number chosen in the “Number of appointments” option.
“Maximum bookings required” is the option where you set the maximum number required for booking. It is added here to allow you to have one more option – to allow customers to purchase a package without any booking. This is possible if you set 0 as both, minimum and maximum required bookings, in that case after the customer chooses a package our plugin will automatically redirect the customer to the info and payment step, skipping the calendar.
The rest of the appointments can be booked from the Customer panel or booked from the back-end by an admin.
Please let me know if you have any other questions.
Correct but the customer cannot book the appointments at a later date. The admin must do it correct? If that's the case...this I am hoping is at the top of your list to add in the near future.

As mentioned in my previous response - it's not very intuitive, so in case there are multiple services like here, you'd see an option to skip booking by clicking on "Next Service" until you see "Continue".
So, the first service (Yoga):
When I click on "Next Service", I move to the next one (Cardio):
Then, the last one (Aerobic), where "Continue" is displayed:
As you can see in the next screenshot, there are no appointments booked:
If you only see the "Back" button, you've misconfigured something, and I can't say what that is without taking a look at your website.
I could do that, of course, if you can provide me with a temporary wp-admin user (Administrator) for your website. However, since this is Juan's ticket you won't be able to provide your credentials here (they would be visible to all customers), so you'd need to open a new private ticket in order to share credentials with us.
