I am sorry to disappoint you regarding the Gravity forms, but when using our integration with Gravity forms, you can link one Gravity Form to one output wpDataTable at a time;
This will not create a new table in the database, it will also not be able to add the data from the form to an existing table.
Our developers might improve this in the future, but i can't say an ETA on it.

im actually using it to manage “non word press” tables that I have added to the WP database.
Regarding gravity forms, would I be able to add data via form to these existing tables rather than creating a new table?
