Tables where wpDataTables are should not be cached, especially if they are linked to existing sources that tend to update with new or modified data every now and then. When the page is cached, the old data remains and until you clear it, new data won't appear.
So, either clear your cache frequently, or disable caching for pages where wpDataTables are.
