Please provide me a temporary WP-admin (administrator) user for your site where this happens, so we could log in and take a look ‘from the inside’ as that’s the most efficient way to see and resolve the issue.
We do not interfere with any data or anything else except for the plugin (in case that’s a production version of the site), and of course, we do not provide login data to third parties.
You can write credentials here just check PRIVATE Reply so nobody can see them except us.
I logged into the back-end of your website but I could not find the difference between the time slots configured in the back-end and the time slots displayed on the front-end. Can you please provide me with the screenshot of a such example?
In regards to the time slots being displayed on the front end: if you want to make a time slot step the same as service duration in the booking process please enable the "Use service duration for booking a time slot" option on the Amelia/Settings/General settings page.

The difference in the time zone is due to the fact that the time zone on your website is set to UTC +0 and the employee's time zone is set to Asia/Singapore. The time slot on the front end is displayed in the time zone of the employee.
If you want the time slots to the way you described below, you will need to have the following configuration on the Amelia/Settings/General settings page.

I've set employee time as 9am to 9pm but the customer facing booking system keeps showing 3am time slots. https://www.tailsup.sg/book-an-evaluation/
Also, my service is 3 hrs long yet the time slots overlap.
E.g. 3am to 6am, 4am to 7am. How do I fix start times, eg 3am to 6am, 6am to 9am.

Specifically for evaluation service (screen shot 1 included), the time slots only include 2am and 6am.
The employee's (Tails Up Changi (Eval)) working hours are set for 10am - 930am. (screen shot 2 included below)
The hours dont tally? How would i go about setting a time slot of:
Separately, I understand i canont set overlapping slots, eg 10am - 1pm, 11am - 2pm, 12pm - 3pm?
