We will be replacing the table on this page, with a wpdatatable. Notice the gold column headers have the column title plus some additional detail underneath. I tried to emulate this in wpdatatables by putting HTML encoding in the column name, please see the attached.
Is there a way of accomplishing this?

I am sorry to disappoint you, but unfortunately, something like this is not possible with the plugin's built-in features.
The only table type that would allow you to do this is the Simple Table, but with it - you would not be able to enable sorting, filtering, or pagination. Also, you wouldn't be able to create charts with this table type.
