You can use the following CSS code to hide the employee field from the search booking form:
#am-search-booking > div.am-search-filters.am-scroll > div:nth-child(7){
display: none !important;
}

You could navigate to the Customize page, switch to different forms and hide the "Employee" field on each of the forms.
