I am new to wpDataTables plugin and am enjoying the discovery of what it brings to Wordpress. Can I use the ability to collapse columns (with the data accessible on a second row via the “+”) on all screen sizes (not just mobile and tablet).
Firstly, I would like to sincerely apologize for the delayed response as we have been experiencing an unusually high number of tickets. I am sorry that it has taken longer than usual to respond to your concern and your patience is highly appreciated.

If you wish to have the responsive behaviour on all resolutions including desktop; you can just increase the "tablet width" and 'mobile width' in the plugin Main settings;
you can set a very high number such as 2000 pixel width; in this example I placed full HD ; 1920 pixels;
and if I open the WordPress pages on this resolution, it will have collapsed columns with the little expander + symbol on every row.

I am sorry but I am not sure i understood, when you say you need the collapsing to start from the second row, if you can describe this in more details, and i will advise if that can be achieved?
I will give you a typical example of a responsive setup we use.
A typical layout with our built-in responsive setup can be, for example, like on this screenshot, two columns showing fully, ( you can choose one or more to be "visible") and the rest of the columns, "hidden",
then there is an " + " button, to open a certain row, and show all the details if that makes sense?
