Is there a way to track and display the number of hours someone accumulates using a service or attending an event? I'd like to create a reward system for people that reach certain hour milestones.

Let me know how that seems in terms of the goal for tracking data.

Regarding a reward system, i suppose that might be achieved by manually granting certain customers coupons,
or if you need a more complex/sofisticated setup for rewards, you could try a combination with a Membership plugin, and User Role Editor plugin;
you could offer certain discounted services on pages that you could restrict Access, and only allow access for certain members, with certain custom User Roles, such as "VIP" , for example;
