In short, I've created an event to occur on May 4th at 15:00 for 30 mins. I then added another date for the event - also May 4th but at 15:30. On the Events listing screen (on the back-end), Amelia lists the event separately for each of the times. But on the live page, Amelia seems to combine the times to make a single event occurring on May 4th from 15:00 to 16:00 ?

This is shown to like that you because you have created one event with two time intervals.
If you want them to be shown separately, you need to create one event at a time and save them separately.
