An issue with email notifications could be caused by several reasons:
Your hosting provider is blocking all 3rd party settings and only allowing their SMTP (or other) settings.
Your website has a PHP version of less than 7.
The credentials are not correct.
There's something else blocking the notifications from being sent.
If you're using Gmail, please check out this article for detailed setup instructions.
Please check these points, and let me know if you were able to resolve the issue. If you're still not able to resolve the issue, we'll need to remote into your website, and see what's going on.
The issue we seem to be having is not with the test emails but the Outlook Calendar has not synced correctly as "busy spots" are not showing when we try to book an appointment. You are able to book anytime but this does not reflect the "Busy Slots" on my employees' calendar... I think there is a syncing issue?
In regard to SMPT access, we are working on this and will update you on the other ticket with login information for level 2 support.

Would this have maybe caused an issue with the syncing? Would it be worth trying the process from the start again?

The slow load can be caused by a lot of things - the number of appointments you have, the number of customers, the number of employees, etc. Other than Amelia, it could be caused by the amount of other data you have on the page. Are you on a dedicated, or on shared hosting? Can you increase the php_memory_limit on your site?
If you're not sure how to do that, you can reach out to your hosting provider.
As Amelia does not have that many resources to be loaded on the page, this could be caused by plenty of other factors that I listed below. Amelia gets loaded the last, to avoid conflicts and that is why it seems to be loading slowly. Have you tried to increase the php_memory_limit value on your site?

The "Client Secret" seems to have the wrong format. Can you please integrate it once again and follow these steps from the documentation.

Thank you the sync is now working correctly!
One final thing before we close this ticket. The page load speed for this plugin seems to be incredibly slow. Using: https://gtmetrix.com/reports/operance.app/WwmvXFaX/
We could not use this plugin if the load speed was 10secs as the bounce rate for our website would be poor and the user experience even worse.
Gtmetrix highlights that my load speed is 10.5 seconds because of the following issues:
Server Response Time = 1.6s
Chaining Critical Requests = 5.5s
Render Blocking Resources = 295ms
I have also attached the full breakdown in the images below.
