I have been looking for a workaround for some time, but despite best efforts still not able to confirm if we can do this.
I have to escalate this to our 2nd level Team, and possibly to the developers, just to be sure to give you accurate information.

I haven't had a chance to incorporate this, as I've been busy (and finally, successfully) building a 1.2m record dataset and running it via wpDataTables
If you can, would you mind explaining why there is no formatting option on the two date fields that I've imported?
They are currently correctly displaying as dd/mm/yyyy but there is no option to change Date Input format or otherwise change the display style.
All dates inherit the format from wpDataTables General Settings. The imported format needs to be the same in order for wpDataTables to pick up the correct dates and import them. This is how the plugin currently works, and our developers haven't had the chance to adjust DataTables' logic in order for you to choose the import format.
We hope they'll be able to do this soon, but we can't make any promises.
I'd like to change the global search block from %LIKE% (LIKE?) to = (equals)
Is this possible, please?

wpdatatables_filter_mysql_query( $query, $tableId )
It is applied to the MySQL query before it is sent to the MySQL server.
$query is the query text
$tableId is the table identifier from the MySQL table (wp_wpdatatables).

Sorry for the late response.
