If a Google Calendar event ends at 15:50h, I want the available booking slot to start at 16h, not 15:50h.
I want Amelia bookings to start on the hour, never 20:30, never 20:45, always 19h, 20h, 21h, etc.
IMPORTANT: I'm not referring to buffer time!

You can try to do two things, you can set that the default time slot step i 1 hour
And you can enable the option "Use service duration for booking a time slot"
in Amelia/settings/general settings

The issue is when another Google Calendar event ends at an odd hour, like 20:50, then Amelia starts counting 1h blocks from 20:50, instead of 21h.

We checked on your site your services last 50 minutes plus a buffer time of 10 minutes.
If you want your services to show on every hour, you have to enter them in Google 50 min + 10 min, or you can simply enter the whole hour at once because you have 10 minutes buffer for every service.
If you enter only 35 minutes in Google, for example, since it is synchronized, Amelia will block only 35 minutes because you entered it that way.
