I have Google Meet enabled and it sends Notifications with Google Meet links and adds to Google Calendar automatically when I use Services. But this does not work for Events Booking. It just sends a plain placeholder in the form of %google_meet_url% and not the actual Google Meet link.
Is it possible to generate Google Meet links and add to Google Calendar in Events Booking of Amelia mail notification ?

Currently, there is no such feature built-in. Unfortunately this is not currently possible, with Event notifications you can use the Zoom URL link for now.
I'll kindly ask you to add it as a feature suggestion on this page.
Features are pushed up on our "to-do" list when there are a lot of customers requesting those features, so having your vote as a customer can be beneficial to this feature being developed sooner.
