1. You can export a list of your customers in a form of a CSV file, not employees. At the top right of the “Customers” page and next to the sort option, tap the “Export” icon button. Clicking on the “Export” icon button will open a dialog allowing you to choose the delimiter used for CSV and to select the columns you’d like to export. When you are ready, tap on the “Export” button in the dialog to download a CSV file.

2. Custom fields can only be added to services and it will appear on the 4 step of a booking process just before the customers will pay for the appointment.

I'll kindly ask you to add it as a feature suggestion on this page. 

Features are pushed up on our "to-do" list when there are a lot of customers requesting those features, so having your vote as a customer can be beneficial to this feature being developed sooner.
