To change the font colour for example you will need to add a custom class (for example customcolor) and define that class in the Custom CSS tab like this
table.wpDataTable td.customcolor {
color: white !important;
}

You can use conditional formatting to assign a CSS class to a specific cell,
then add a custom CSS that would change the style of the cell as you wish.
