Now I ran into an issue where it says translation to Dutch is fully supported and in the wp admin back-end, in the Amelia settings the "On-site" is translated correctly to "Ter plekke", but in the front facing booking form it says "On-Site" with a capital S. Customers can get confused by this as many of them are not tech savvy and to them it might mean "Pay on the web-Site".
I tried the Poedit method as described in your forums here, but "On-Site" string is not in there. I added it by editing the PO file directly but it doesn't work. I know the PO files and MO files updated because I tested it with a different translation string and that worked. It just doesn't recognize "On-Site" -> "Ter plekke". It does recognize it for "On-site" -> "Ter plekke".
I checked your code in FrontendStrings.php and BackEndStrings.php and I never see "On-Site", only "On-site".
Also the PO file doesn't contain "On-Site" but only "On-site". See screenshot 'DutchPOFile.jpg'.

Amelia doesn't have any language settings, and it inherits its language from WordPress.
We have a Dutch translation. You need to set the language in WordPress for your site to be in Deutch.
Adding language in Amelia has the functions of the second language for the "extra (additional)" translation but the language needs to be the same as your default website language. After you change the language of your WordPress site, Amelia will be translated also.
Approximately 80%-85% of the plugin is translated into the languages stated above, but you can always translate it using Poedit or Loco Translate.
As for Poedit that you tried translating all strings in the plugin is very easy since there is a file with all strings ready for translation. We usually advise using Loco Translate or POEDIT, and here are the steps that you need to take to translate the plugin.
This is an example for the French language:
Download and install POEDIT. After that, open the program and open the file from your website located in ..wp-content/plugins/ameliabooking/languages/fr_FR/wpamelia-fr_FR.po. Translate all the strings that are not translated Save the translation.
If you’re using some other PO editor, other than POEDIT you may need to compile the .mo file also. POEDIT does this automatically, but we cannot guarantee that for other editors. Go to ameliabooking/languages/fr_FR/ folder and copy these two files called wpamelia-fr_FR.po and wpamelia-fr_FR.mo back to your website in the location ../wp-content/plugins/ameliabooking/languages/fr_FR/.
During the translation of all these strings, you will notice that this file doesn’t have the names of your categories, services, custom fields, descriptions, and notification templates since all these need to be translated directly in the plugin.

Thanks for the reply. It didn't work sadly so I decided to do a CSS hack.
For anyone wondering what I did: I went to:
The WordPress dashboard -> Display -> Customizer -> Additional CSS
Then I added the following CSS hack (not recommended but it's the familiar devil to me):

visibility: hidden;
}
button[value="onSite"] span div p:after {
content:'Ter plekke' !important;
visibility: visible !important;
display: block !important;
}
button[value="mollie"] span div p {
visibility: hidden;
}
