Second question is: is it possibile to accept each and any appointment of each client before let them pay? Or maybe a way to control every single appointment and let the client know if the appointment has been accepted?
If you are referring to the Minumum and Maximum bookings required in the packages options, that unfortunately, cannot be used without the pro version as packages of services are a part of the Amelia pro version.
As of now, when the customer books an appointment that has the appointment status of pending, with the payment method being one of the online payment methods, they will be charged right away as that is how the Stripe/Mollie/WooCommerce integrations work. The notification is sent out if enabled, once the appointment has been changed from pending to approved.

My website is a bike officine and I need the costumers to be able to book different days or hours but I want my employees to be able to acept the bookings. Is this possibile?
If the default appointment status is set to "Pending", you will be able to manually change the appointment status from the back-end or employees from the employee panel.
