The booking form is in Norwegian. Going through the process of selecting: "Velg type samtale" = type of conversation "Ansatt" = employee A date and time. Taking a closer look at the "E-post:" e-mail field a bunch of letters and symbols are seen. Here we need to have a better placeholder which is readable in place.
You can change it through the .po files in the "ameliabooking/languages/" folder. So if you are using en_US, go to wp-content/plugins/ameliabooking/languages/en_US, edit the .po file and change it.
If you need some further assistance, please don't hesitate to contact us.
As this is a a bit confusing it has taken me some time before I was able to get back to it. Right clicking -> Inspect in Chrome this is the placeholder information that I see:
placeholder="[email protected]" (Screenshot shows what it really looks like. It is converted to readable text.)
(Also see the attched screenshot.)
This information is not found in the Po or MO files in the English or Norwegian version.
It's could be generated by the "Email Encoder - Protect Email Addresses" plugin, or some other plugin to protect the email address.
If not, then please deactivate all other plugins except for our plugin, refresh the page where the issue is, and see if it is resolved (it should be). If it is, then start activating other plugins one by one, and after each activation refresh the page to see if the issue reoccurred. Once it does reoccur, you will have found the plugin causing the issue.
Let us know if it helps, please.

You are correct we are using the plugin: Email Encoder - Protect Email Addresses plugin. I deactivated the plugin and instead of the cryptic encoded placeholder I now see [email protected] placeholder.
I am not sure if this needs to be taken care of inside the Amelia plugin or the Email Encoder plugin, but I will post on the support forum for the plugin and give a link to this support thread.
Under WordPress dashboard -> Settings -> Email Encoder. Advanced Settings: Clicking the checkbox to " Show advanced settings for more configuration possibilities." Clicking the button Save all.
Protect... Clicking the checkbox:
no script tags "Check this option if you face issues with encoded script tags. This will deactivate protection for script tags."
Clicking Save all button.
Retesting the form. The E-post (Email field) now shows the default in Norwegian the [email protected] instead of the earlier encrypted placeholder.

How do I fix this?
Hello Paal,
Thank you for reaching out to us.
You can change it through the .po files in the "ameliabooking/languages/" folder. So if you are using en_US, go to wp-content/plugins/ameliabooking/languages/en_US, edit the .po file and change it.

Hello Paal,
I hope you're doing well.
Yes, this is actually Unicode text for "[email protected]"

Btw I included a screenshot of the correct version of the Email (E-post) placeholder field.
Dear Paal,
I hope you're doing well.
You can override this behavior for the placeholder if you enable "no script tags":
