This happens because you most likely set up to have a 30 minute buffer time before your appointment and 30 minutes buffer time after your appointment.

If your service last for 2 hours and you have 30 minutes before and after when someone books an appointment 3 hours will "disappear" from the calendar because in this case service lasts for 3 hours with buffer time.
