We're having trouble with our calendars not syncing properly.
If our service providers set up their calendar from the employee portal and then add their own jobs to their google calendar (not in their portal) it doesn't block out any times in Amelia and they are being double booked.
Is there something we have to do from the back end also to get them syncing correctly? Do they need to log in to their employee portal every time they book something to ensure it's blocked out? Can they not just add busy times to their calendar so it blocks it out in our end?
When you integrate the Google Calendar, you need to enable "Remove Google Calendar Busy Slots" in Amelia settings/Integrations/Google Calendar and increase the "Maximum number of returned events" to a big number (2.500 - the biggest value should work fine). After that, you need to access your employee's profiles and connect your employees to their calendars.
When they are linked with their calendars, the plugin can only pull "busy" events from those calendars, but you still need to configure your employee's working hours. If, for example, your employee works from 09:00 - 17:00, whenever there's a busy event created in the calendar, that time slot will become unavailable in Amelia. So, if you block an entire day in Google Calendar, it will not offer any free time slots for that employee during that day.

Am I incorrect in thinking that they can link their calendars themselves through their own employee portal? Do I also have to add them in our backend employee details too? They only have access to the portal and not the admin panel.
We would ideally like new contractors to be able to register (through another app) and then be able to add themselves to our platform without us having to do too much administration on our end. We plan on having over 100 contractors so the more this is automated the better.
Please provide me a temporary WP-admin (administrator) user for your site where this happens, so we could log in and take a look ‘from the inside’ as that’s the most efficient way to see and resolve the issue.
We do not interfere with any data or anything else except for the plugin (in case that’s a production version of the site), and of course, we do not provide login data to third parties.
You can write credentials here just check PRIVATE Reply so nobody can see them except us.

If you use the front-end Employee panel and want to allow employees to connect their Google calendars from there, you also need to add the full URL of the page where you have the front-end Employee panel, as well. Please make sure to include the whole URL, with the closing ” / ” included, as shown in the screenshot below (“staff-portal” redirect URI).

Sign in to the Azure portal, search for and select App Services, and then select your app. Note your app's URL. You'll use it to configure your Azure Active Directory app registration.
From the portal menu, select Azure Active Directory, then go to the App registrations tab and click on your registration.
When you open your registration, click on the link next to the "Redirect URIs" which is "1 web" in my example.
After that, just click on the "ADD URI" button and simply add the URL of the employee panel on your website.

We also found the google area to add these details to.
From what I can tell, if we block out a spot directly on to the google calendar it doesn't block out in the Amelia booking side. It only blocks times out if we add an appointment into the employee portal area. Is that correct?

Also, when the employee adds an appt. in their portal every one of our customer's names and email's show up for them. This is far from ideal and we don't want this happening. Can customers details be removed?
If Employee already has events in the Google calendar marked as busy, those will not be available for booking in Amelia – this will prevent overbooking. Rescheduling, canceling, or deleting the appointment needs to be done in Amelia. Suppose you reschedule the appointment in Google Calendar. In that case, that will not reflect in Amelia, but if you reschedule the appointment in Amelia, it will be updated in Google Calendar as well.
Regarding your second question, are you referring to the appointments or the events, and can you specify which placeholder you use for the customer information display?
