Please check this feature in Amelia > Settings > Roles Settings > Admin
If you enable this option, Admin will be able to book appointment at any time (working hours, special days and days off for all employees will be ignored).

1) You can customize the displaying of this field in Amelia > Customize :
Or disable the display of this field at all, use this CSS rule on the page between style tags where you will hide Employee dropdown:
