Unfortunately, this is the functionality of Highcharts - when the axis is hidden, the label stays.
I don't believe this is possible even with some custom wpDataCharts callback as the hiding of the label needs to be triggered at the same time the axis is shown/hidden, and that's not how the callbacks work - they're not dynamic.
If you wish to change this behavior, unfortunately, it needs to be custom developed, and that's not included in the provided support for the plugin.
Hide the tag of the Y-Axis when I turn off the line.
The scale already turn´s off, but the label still shows.
