Is there any way of formatting rows that are sub headings/merged cells (data table coming from google sheets) or do I have to put multiple tables on one page? Seems like a lot of unnecessary calls.
wpDataTables doesn't support sub-headings or merged cells. The only table type that accepts merged cells is the Simple Table type.
The external sources (Excel, CSV, Google Sheets, etc) need to have a simple structure, with no formatting or formulas applied, otherwise it may not be able to pull the necessary data.

I was playing around with it and put the subheading with some special characters around it, it made it a bit easier to read (and less calls)
