You can achieve this with CSS but you would have to install the "Add Admin CSS" plugin as there are changes in the back. Eg:

.am-customer-extras-data.el-row > div > h3 {    
background-color: yellow;    font-weight: 700;    font-size: 20px;
}

It will look like this

But what you add is all about certain parts, so you can't make it target certain sections, but if the custom fields differ by service, you'd see differently.

These are the customers, so it would stay the same, but the custom fields would change by field.

Maybe it can be achieved with some custom CSS in the meantime you can always use Amelia/customize/Event List Booking Form to change colors so it can be more visible.

Unfortunately, I have to agree with you, as we don't yet have the plugin optimized for people with disabilities. This is planned for the future, but it's been prolonged for quite a while now, and I can't say when it will be included.

Personally, I don't believe that it will be fixed any time soon. I'll make sure to remind our developers that this is a needed fix, and I hope they'll be able to resolve it.
