We have been preparing Amelia for our site and tested/"played" by creating many appointments and events.
As we want soon to start in production as new with appointments, events and finance (paiement), what is the best way to have Amelia Datas "restarted" as new ?
Can we bulk delete all appointments, disregards of their status (confirmed, awaiting etc... ) ? Can we proceed as well for events ? Do we have first to delete all paiements of all appointments ?
So what is the best and simple way to restart these appointments, events and paiements from scratch, without of course to delete employees and services ?

You can delete the plugin by first toggling the "Delete Amelia content" switch to enabled in Amelia > Settings > Activation, and then reinstall the plugin afterward. But this will delete all Amelia's data.
If you want to delete selectively, you can also directly delete the necessary data from the MySQL database (via phpMyAdmin), for example, wp_amelia_appointments for appointments, wp_amelia_events for events, e.t.c. You may have a different prefix in the database (not wp_).

Please deactivate Amelia, clear cache, activate Amelia, clear cache again. You can clear cache with the plugin "W3 Total Cache" or any other, also clear your browser cache and cookies.
As Amelia booking and customizing works better without cache, I deactivated cache plugin since mid-december 2021 and WP site is running without cache activated.
However, I followed your instructions, and it is still the same about these greyed past appointments.

I'd like also to delete the 2021 "special days" of all employees as well, however I don't find any wp_amelia_employee tables in the DB.
What is the the best way to do this ?

There is no separate table with employees, you can find your employees in the table "wp_amelia_users" and filter them by "provider" name value.

I found them, however I still don't see how I can delete (clear) all their previous "special days" using phpmyadmin.
Is editing and removing the previous "special days" one by one for each employee the only way ?
Like this example (image, hope you can see it), I'd like to delete these two special days, anyway to do such a bulk delete, and for all employees ?

You need to delete records in these 3 tables:
It is possible that your prefix is not "wp_", but something else, so if that is the case, please look for "your_prefix_options" table.
your_prefix_options_amelia_providers_to_specialdays
your_prefix_options_amelia_providers_to_specialdays_periods
your_prefix_options_amelia_providers_to_specialdays_periods_services

It could be a cache issue.
Please deactivate Amelia, clear cache, activate Amelia, clear cache again. You can clear cache with the plugin "W3 Total Cache" or any other, also clear your browser cache and cookies.

As Amelia booking and customizing works better without cache, I deactivated cache plugin since mid-december 2021 and WP site is running without cache activated.
However, I followed your instructions, and it is still the same about these greyed past appointments.
Any other ideas ?

This are pulled from these tables: wp_amelia_locations_views, wp_amelia_providers_views, wp_amelia_services_views.
This table's content can only be removed manually from DB.
