For adding the appointment you need to go to Amelia/appointments and just click on blue button called new appointment. As for changing the time of appointment you just need to choose an appointment and in edit appointment you can just change the time and date that you need just like in the picture

Your solution changes the time for the whole group, but I just want to override date for a single customer

I'm afraid that if it is a group appointment you can not change the time of an appointment only for one customer.
