Most likely in your backend option "Allow admin to book appointment at any time" is enabled (Amelia - Settings - Role Settings - Admin), since you have this option enabled, you can book at any time (working hours, special days and days off for all employees will be ignored).
For everyone else, besides admin, it looks the way you set it up.

But this seem to be a problem users have often, you should put this in your online documentary or FAQ, cause i saw others tickets asking for this, maybe explaining it differently.

Because that is the issue I'm facing: The Admin/Employee should be the only ones to book an appointment at any time, not the customer/client. The only way to solve it is to disable the "Allow admin to book appointment at any time"?

Same here. I'm getting appointment some times appearing outside of the hours i've set. I can't work out what's triggering it.

Actually, we have it in our documentation, but thanks for your suggestion, we'll probably add it to FAQ.
