I'm testing Amelia on the test website, is it possible to change this below with CSS? I'm not being able to get it to white, which is the color that I want, so I figured some CSS to override the current color would do the trick

You can use the following CSS to modify the text color of the buttons:
.amelia-app-booking #amelia-booking-wrap .am-step-booking-catalog .am-select-date .am-button-wrapper .el-button span {color:black;
}
