Please provide me a temporary WP-admin (administrator) user for your site where this happens, so we could log in and take a look ‘from the inside’ as that’s the most efficient way to see and resolve the issue.
We do not interfere with any data or anything else except for the plugin (in case that’s a production version of the site), and of course, we do not provide login data to third parties.
You can write credentials here just check PRIVATE Reply so nobody can see them except us.
I have performed checks from my end and came to the conclusion that this is an issue with the WordPress time zone settings. When time zone is set to UTC+0, the first booking slot available is at 11:10, just like you mentioned below. I switched the Timezone to Paris and the first booking slot became available at 10:10.
You can change your time zone settings in the Settings/General but please note that all the appointments that are already booked will have their start time altered.

Please check if you have a browser extension for grammar, like Grammarly or Language Tool. If you do, please turn it off for your back-end site, and you'll be able to modify and save the notifications without any issues.

j'expliques :
C'est pour le site d'une cliente, elle est masseuse, ses horaires de travails sont 10H00 - 19H00
mais lorsque je choisis un massage le premier créneaux horaires proposé est 11H10 (10mn de zone tampon) au lieu de 10H00
que faire car la je ne sais pas trop ?

Thank you for your patience.
I have performed checks from my end and came to the conclusion that this is an issue with the WordPress time zone settings.
