You have to adjust two things in order to achieve this:
1. You need to set that duration of your service is 10 h (08h-18h) and you need to assign an employee to that service
2. When you assign an employee you need to set his working days and working hours to be from 08h to 18h (not from 08h-12h and 14h-18h) and then you have option breaks in there you need to enter that employees break is from 12h-14h. When you set it like that customers will be able to book the whole day and everything will work as you wanted.
If you have any further questions please don't hesitate to ask.
Please provide me a temporary WP-admin (administrator) user for your site where this happens, so we could log in and take a look ‘from the inside’ as that’s the most efficient way to see and resolve the issue.
We do not interfere with any data or anything else except for the plugin (in case that’s a production version of the site), and of course, we do not provide login data to third parties.
You can write credentials here just check PRIVATE Reply so nobody can see them except us.

You can't add any breaks in the employee's work hours since in that case (as you could see), you wouldn't be able to select the 10-hour service, so your employee needs to have work hours from 08:00 - 20:00.
By removing the breaks, and extending the working hours like this, your employee would still work until 18h, but the buffer time is included in order to achieve your working schedule.
So, for example, 2nd appointment for the half-day service starts at 14:00, and lasts until 18h. With the buffer time (that's needed for the time between two appointments), the employee's work hours have to end at 20h, otherwise the 2nd appointment would not be available for the half-day service.
So, configure your employee like this:
And your services like this:
And you should have no issues with this.

The issue with the calendar is coming from GTranslate plugin. Basically, it's doing what Google Translate (as a browser extension) is doing - replaces everything on its own.

It does the same thing for the calendar - it translates the text (badly), and then removes all Amelia's styles. My advice is to install a better multi-lingual plugin like Polylang or WPML which won't be able to translate these dynamic strings (like service names), but they will do it correctly.
The dynamic strings would have to be translated manually through Amelia/Customize section, and by clicking on the "Language" button next to the Service name:
It can't work like this. You configured the 4h service (Peche aux requins - Demie journée) so it lasts 4 hours and added 2 hours of buffer time:
This would be OK if you hadn't configured the employee's work hours so he works from 08:00 - 12:00, and then from 14:00 - 20:00. With this setup, the employee works for 4 hours between 8 and 12, and there's no room for a 6h long service (4h service duration + 2h buffer time).
So, here's how it goes:
1. Employee's work hours from 08:00 - 20:00:
2. "Use service duration for booking a time slot" in General settings enabled (this is why there was a slot from 09:00 - 13:00, since this option was off, and the default time slot of 1h was applied to free time slots on the front):
So, now, on the front-end you can choose only 2 time slots for the half-day service:
And only one slot for the whole day service:

Sorry for my bad english i'm french but i need help with ur plugin.
I need to lock the appointement possible for 1 employee to only :
- 8h00-12h00
or
- 14h00 - 18h00
or
- Full day (8h00 - 18h00)
How can i do that ?
Because if i enter a pause time for the employe, customer can't select a full day appointement because of the pause...

No day are available... cause the service continue during the break.

Look your screeshot, slots are 8:00-12:00 and 12:00-16:00... But we want 14:00-18:00 not 12:00-16:00
Amelia don't apply the buffer time ?

I forgot to turn the "Include service buffer time in time slots" ON:
Now, when this is enabled, the time slots show up correctly:
