I recently purchased this plugin and when booking appointments on the same day there is a 7 hour gap to book appointments. I disabled the appointment buffer setting, checked the schedules of the employees, checked store hours and everything appears correct.

This can only be the issue with the setup let work this out together.
Send me a couple of screenshots of: Employee working hours, Employee breaks, Service settings lengths check buffer time, etc... And please while you doing that check once more for anything that is not set up right.
You didn't send me working hours from your employees but it doesn't matter please provide me a temporary WP-admin (administrator) user for your site where this happens, so we could log in and take a look ‘from the inside’ as that’s the most efficient way to see and resolve the issue.
We do not interfere with any data or anything else except for the plugin (in case that’s a production version of the site), and of course, we do not provide login data to third parties.
You can write credentials here just check PRIVATE Reply so nobody can see them except us.
The working hours are set the same as the hours right now. I am able to book other days with the correct times. Its just the same day seems to block for 7 hours.

After that, we were in incognito mode so that our roles as Admin would not cross we scheduled an appointment at 13 with Nikki, and then we tried for the same service you sent us in the picture to reserve and everything was successful. The appotment that was scheduled was from 13 to 14 and the next free one was from 14 and all the slots before that.
We really don't see your issue, everything worked for us as you can see in the pictures.
