Thank you for reaching out to us.
Unfortunately, this can't be done yet. We will add it in one of our future updates. Currently, you can only create 2 employees - one would work from 8:30 - 17:30, the other would work from 17:30 - 21:30. You can configure different prices for the same service for different employees, so this approach would work.
