Sorry for the late response.

Amelia Employees can only see the customers that previously booked with them, so if you only have events, your employees and the previously booked customers are probably not linked, and employees will not be able to see them.

There is a workaround that works for the back-end, but not the front-end employee panel. You can install a plugin "User Role Editor" and with it, change the capabilities of Amelia Employee user role.

When you access Users/User Role Editor, select the "Amelia Employee" user, and filter per "customers". Enable all these capabilities and your employees should be able to see all customers from the back-end:
