I am trying to create a service package that should be available for booking only on the first Monday of every month. So, on the Select Date and Time screen, a customer should only see a month's first Monday enabled for selection.
(this is for a classroom service that starts a new batch on the first Monday every month)
I cannot seem to find the appropriate configuration setting for such an offering. Could you please advise or point me to a resource describing the how-to for this scenario?

This could be achieved with adjusting the schedule of the employee who will work on this package; if you create an employee who will work on Mondays only on this service, once customer opens a package to book, they will only see Mondays.
If you also have single services for this package, I recommend creating a duplicate; 2 exactly same services, one that you will use for single bookings, and the other one which will only serve to be used for the Package, and will have this one employee assigned who works only on Mondays.
Actually, in this scenario, I have a single person offering 12 coaching programs at different times of the day/week/month. Plus, he may keep adding more as business grows. Unless I have misunderstood your suggestion, client would need as many employee / user accounts to manage each service - which seems odd. Hope this kind of a service schedule definition can be considered as an integral feature in Amelia?
One employee can only work on one appointment at a time, so if you have 1 employee, and 12 services, the employee can only work on one appointment at a time. For example, someone books Service1 from 12:00 - 13:00 on November 20th. No other services can be booked during this time, since the employee is already booked, and the logic of the plugin doesn't allow the employee to work on two services at the same time.
From your initial comment, though, it looks like you want to add custom working hours for one service only. If this is the case, you can configure employees' working hours in a way that (s)he works on different services every day.
For example:
In the example shown above, this employee will work on services "Thousand 2" and "Thousand 3" every day between 09:00 and 17:00, but on "Thousand 1" only on Mondays from 09:00 - 17:00.
The same logic applies, though, so if someone books "Thousand 2" on Monday, between 10:00 and 11:00, "Thousand 1" will not be available during that time.
