When a user types in their email to Amelia and then proceeds to their address, if they autofill it is very likely to change their email.
Fields passed onto WooCommerce should be read only!

At the moment, Amelia and WooCommerce integration works as a payment getaway, so its functions are limited. Therefore, it is not possible to link Amelia User profiles to WooCommerce profiles. Regardless if the email address is different in WooCommerce checkout or not, Amelia will only store the email address that's been added through its booking form.
You can suggest that as a feature request here, or check if this request was already submitted and vote for it.
