Hi there.
I want my clients to be able to add new entries to their tables, but I need that once the table is created they do not have permission to edit some of them.
Basically I need them to be able to fill in all the fields of the form but not to be able to edit some of them.

Thank you for reaching out to us.
You can achieve this with our Gravity form addon and simply disable the editing for desired columns. So when you create the table and submit the desired information in the form you will see it displayed in the table but if you try to edit the information you will only be able to access the columns that have editing enabled.
