Which plugin have you removed; Amelia? Please make sure that you have version 4.2 when you reinstall it.
Have you checked in Amelia > Customization if the color of the text is set to a color that does not "pop out" on that background; you can check here when you go to Amelia > Customize:
Please click on Form Colors; both, and check which colors are set for text.
Custom code needs to be applied to the page where the booking form is. Depending on what you're using (Gutenberg blocks, or some page builder), adding the CSS can be done in a few different ways.
