I would like to hide the employee from the whole booking process for the client. I want the client to book without having to choose an employee since the assignation has to be done by an admin. Any possibility to hide the employee dropdown AND all entries of the employee in the frontend? (ie each service, booking process etc.)
That can be achieved by disabling the Employee selection drop-down in Amelia -> Customize. Please choose the booking form that you want to change on the top of the Customization page, and then edit the corresponding element:
Also, if you want to hide Employee's name on the booking form, then it probably can be done with custom CSS. Please provide us with the link to the booking page, so we will be able to try to find suitable CSS for that.

Eg: using the ameliasearch shortcode will display again the assigned employee in the result list. This for me (and surely for other users) is a dealbreaker. Since I am still in development I cannot send you URLs at the moment because addresses will change. Any more advice will be highly appreciated. If there is no other workaround you can suggest I will get in contact again.

We are planning to add an option to hide information about assigned Employees to one of the coming updates, so hopefully, it won't take our dev team too long.

New options for hiding the employees have not been added, so you can hide the employees drop-down, and hide the info block where employee, location and time are written in the last step of the booking form, but if you only want to hide the employee from that last step, that still needs to be done with custom CSS.
Our development team is currently working on some big features, and they'll get back to the Customize section right after that. I hope that more options will be included in about a month or two, but I can't promise an exact date.

You don't have to use Custom CSS for this.
Access Amelia/Customize, select the form you're using and navigate through it to hide the employee selection and employee data from all the steps.

This ticket is 1.5 years old. Amelia advanced pretty much in the meantime.
We've added the option to hide the employee field, so you will not hide the date and the time of the booking if you enable this.

As for the "Reach Out" section, please access Customize -> Booking Form 2.0 -> Sidebar -> Options section, and disable these two sliders:
It will show like this in the Customize section:
But it will be hidden on the front end. Along with the CSS I provided above, it will look like this:
