Good evening.
We have a service with 6 attached employees, but as their rota changes daily I have to set them all to be available for booking. I only want to be able to book 1 appointment per slot, is this possible, I thought I had it working before but now I am getting multiple bookings (albeit with different employees) for the same time slot. Is there a way to limit it to 1 booking per time slot?

Sorry for the delayed response.
Please make sure that the "Allow booking above maximum capacity" and the "Allow booking below minimum capacity" options are disabled in Amelia -> Settings -> Appointments. Most probably one of these sliders is on, that's why multiple bookings occur.

Both those sliders are off. In case I was not clear, I only want one appointment to be booked in total per time slot, not per employee. One appointment per time slot and choose 1 of the 6 employees. I want that slot to then be unavailable to book with other employees also, think of it as there is only 1 room being available even though there are 6 staff.

I'm afraid, it's not possible to limit the number of bookings per time slot if there are multiple Employees assigned to this Service (since in this case, each Employee will be available for booking for the same time slot).
But, probably, you can use a workaround: if you configure Google Calendar integration and link all Employees to the same Google Calendar. In Amelia Settings -> Integrations, you also need to enable "Remove Google Calendar Busy Slots" and increase the "Maximum number of returned events" to a big value (1.000 or 2.000 for example). Then, when all Employees are connected to the same calendar, once one Employee is booked, other Employees will be unavailable for the duration of the Appointment.
Also, you can suggest that as a feature request here, or check if this request was already submitted and vote for it.
