is it possible to asign the same person to different services, like
service 1 : from 8:30 to 17:30,
service 2 : from 11:00 to 13:00 for exemple,
the same day, if there is availability of course.
It is impossible for me...

I'm afraid it's not possible; one employee can have 2 or more schedules but they cannot overlap (they can work one service from 8 - 11, then another from 11 - 4, etc, but cannot work one 8 - 11, and another one 9 - 12).
You would need another employee for that schedule.
If you have Google or Outlook calendar connected you can connect both of these employees to the same one, so that when employee A is booked for 8 - 11 he nor employee B will be available for 9 - 12).
