I need to disable booking for a service based on number of bookings per slot not just based on staff timetable. For ex. I have a salon with three chairs but five staff. so if 3 customers already booked a single timeslot then this timeslot will not appear to the fourth customer
We don't yet have capacity per location, but you can create a service that has a capacity of 3 occupants. Then, you would configure the Google Calendar Integration, and link all 5 employees to the same Google Calendar.
Then, when an appointment is booked on (for example) September 20th, at 12:00, that time slot will be open for two more customers, with the same employee (unfortunately, there's no way of assigning the same appointment to multiple employees), and all other employees will have that time slot blocked (since Google Calendar integration would create a busy event, and since all employees are linked to the same account).
So, the setback here is that customers would book the same employee, but you can hide the employee selection, so they only book the appointment, and they wouldn't know which employee it was assigned to.

would I be able to add multiple services + products to the cart and then pay them once ?

I am sorry to disappoint you, but unfortunately something like this is not possible with the plugin's built-in features.
At the moment, only one service can be added to WooCommerce at a time, but please check out our packages feature, maybe it will suit your needs.
