I setup my Strip account to purchase via live and when I attempt to run a payment, it gives me an unable to process error.

Thank you for choosing Amelia.
Please make sure that you enabled the live mode in Amelia -> Settings -> Payments and that the credentials are correct. It will be even better if you re-enter the credentials just to make sure no symbol was missed.
If that doesn't help, please provide us with a temporary WP Admin login and the URL to the booking page.
