How can I hide Gender and Date of Birth? And NOT include them when exporting a csv? I'm using Amelia for Events (classes) - so gender and Date of Birth are not relevant.

If you're exporting directly from Amelia events you can deselect gender and date of birth:
Click on attendees
Click on Export icon
New menu will open when you can uncheck these two
