I have a request, this is similar to another Post "Non bookable service".
How to have a service published on front-end but keep it unbookable?
The customers should be able to read the description (i will write there that the service is not bookable now and that they must fill in a form with a link to).

You can achieve this by creating a dummy employee and assigning only this service to him, remove all work hours and add one special day 5-10 years from now so it will not be bookable but it will be displayed on the site
