I saw on doc that employees can sync their own calendar with their google account. but can they choose their calendar to sync ? on their own google account, they can use various calendars (personal and profesional for instance). So, will they be able to choose the right google calendar to sync ?

Yes, they would need to choose the exact calendar they want to connect to their Employee Google Sign In.
