So I am setting up a site that sells a package of 2 appointments, the first one is an initial treatment and then there is a follow up that happens 5-10 weeks after the initial treatment. Is there a way I can make sure that a customer doesn't book an appointment in the 0-5 week period? Currently they can book their appointment and then book the follow up the next day if they wanted to - i need to set a 5 week buffer after the first appointment.

The only way to achieve that at the moment is to set the second Service available for booking in 4+weeks only. Thus, when a Customer books appointments, he/she won't be able to choose any dates earlier.
This setting can be done in Edit Service -> Settings -> General, for example:
It's not possible to set the Minimum time required before booking to 50 days, so you will have to choose between 4 weeks and 3 months.
