I want to know if with the plugin wpDataTables, I can create a table based on a MySql database (not only the wordpress one) and also if it will be dynamic : If I change something in the database and reload the page where my table is, the new data will show up ?

Yes, with wpDataTables you can connect to a separate database and create tables that are linked to the existing source, meaning when the source table updates wpDataTables will be updated as well.
