I'm afraid that it is not possible to use the placeholders for that purpose as variables cannot be inserted into booking in such way.
It probably can be done with some custom work, but our developers are very busy at the moment, working on some priority tasks and fixing bugs and issues with our plugins, so they won't be having the time for custom work in near future.

We uses "Pending" as default because the payment shall goes directly to the employee. And we want use the following message.

Seems that placeholders are not working here. Do you see any other option or can you add this as a feature request please.
